The production of this beer, one of the world’s most complex and unique, demands a great deal of care and expertise. It undergoes a process of controlled and spontaneous fermentation, followed by long months of maturation in the famous beer cellars of Oudenaarde city. After this resting period, the matured beer is blended with “young” beers to reinvigorate the fermentation process. Finally, each bottle is sealed with a cork stopper and meticulously hand-packaged in blue and white paper. The finished masterpiece boasts a reddish-brown color and a fascinating flavor profile that rests on a dry, subtly acidic, and caramel foundation. The addition of apple, rhubarb, sour cherry, malt, oak-derived flavors, and the hints of walnut and raisin in the aftertaste complete the sensory experience.
